Zen 721 opened on December 2nd, 2003  by Brian and Lizzie Mason.  "Zen", meaning the practice of discovering one's true self through meditation and then to vitalize that self in every day life, was the relaxed theme Brian was going for.  "721" is Lizzie's birthday, July 21st. 

Brian acted has head chef and is still the owner of his first restaurant, BL Bistro.  Due to a growing family, In November 2009, Brian sold Zen 721 to Lance Criswell, who is now the head chef and operator.
